Oregano

I planted some oregano three years ago in our new herb bed. It gave us just enough fresh oregano for occasional recipes. This year something about the weather must have been just what this plant wanted because it grew into the star of the herb garden. 

 

I harvested oregano three times before the plant flowered, then dried the leaves in the dehydrator. My stepdaughter Lori has been using our dried oregano in lots of recipes. I'm really happy with how it turned out now that we can dry it in quantity.

Also, I read this year that it's best not to crush leaves when bottling dried herbs because it weakens the flavor. So I'm packing the full dried leaves into jars. Crush the leaves as you use them in recipes to get chef's kiss taste!
