Dandelion Jelly

This isn’t a family recipe. I found it on Pinterest and was intrigued at the idea of creating something with the tens of thousands of dandelions that grow here each spring. I picked a huge basket of them down at the bottom of the bank that we leave pollinator friendly at the front of the house. Then I washed all the blossoms thoroughly and steeped a tea with them. The result is a light, golden jelly that tastes like honey with a hint of citrus.

 

From the foraging to the harvesting of the flowers, dandelion jelly is a lot of work. But I will make it again because I loved how it tasted.
